Instagram does not let you choose a font for your bio or captions. These styles are not fonts. They are special letters from the Unicode character set, the same system that gives phones their emoji. Because they are characters, not formatting, they stay the same when you paste them into Instagram.
Most phones show every style in this list. A few older phones may show a box instead of a letter. If that happens, pick a different style.
Fancy letters look good in small doses, but they have two costs. Screen readers used by people who are blind or partially sighted either skip them or read out each character's name, so a whole caption in a fancy style is hard for them to follow. Instagram search also matches plain letters, so keep your name and the words people search for in plain text.
